Platinum Jubilee: Lemon and amaretti trifle and classic Victoria sandwich cake.

We were asked by and to create them some special Jubilee deserts using their delicious Lemon Curd & Raspberry Conserve, to make their Platinum jubilee celebrations truly unique for their company. We created a twist from the platinum pudding competition from the BBC and created a lemon curd Swiss roll, with orange and lemon jelly, Vanilla brûlée custard and Chantilly cream. Full of generous curls of Callebaut White chocolate, sprinkles of Amaretti biscuits and candied lemon zest. Providing a perfect ending for al fresco Summer lunches and dinners.
